Slow Cooker Thai Green Curry
Slow cookers make eating a healthy home-cooked dinner SO MUCH EASIER!!
Whether you work long hours in the office or are home all day, deciding what to have for dinner when you are hungry is never a good idea!
Investing in a slow cooker (I have this $24 one from Kmart) and making time in the morning (or lunch break) can help your hungry, tired self have a healthy homecooked meal waiting for you at dinner time.
Here is one of our family favourites - Slow Cooker Thai Chicken Curry! You can easily make this vegan or vegetarian or mix it up by adding different vegetables.
Slow Cooker Thai Green Curry:
What you need:
1/3 cup Thai green curry paste (I used the Aryum brand)
400ml coconut milk canned
1 cup broth or stock
4 Chicken breast (you can also use thigh)
1 carrot chopped
1 cup green beans chopped
1 capsicum chopped thin
To serve:
Rice
Coriander (if you don’t like it leave it out)
What to do:
Lightly fry the curry paste until fragrant, then pour in the coconut milk and stir until mixed together.
Add the chicken and carrots to the slow cooker, then pour over the curry mix. Cook on low for 6ish hours.
About 10 minutes before serving (or when you walk in the door from work) add in the green beans and capsicum. This lets them warm up but is still crunchy.
Once ready, break up the chicken with a fork (you could also chop before you start the slow cooker). Serve with rice and top with coriander. I like to cook my rice when I’m prepping the slow cooker so everything is ready when I get home, I just need to warm it up. You can do this too or cook when you are ready to serve.
Notes:
Vegan or vegetarian option - make sure your curry paste is vegan friendly and add tofu or chickpeas at the same time you add your green beans.
Mix it up and add in other vegetables - eggplant, potatoes, greens, baby corn etc.
If you don’t have a slow cooker you can cook this as a quick mid-week dinner. Just cook your chicken first in a frying pan and then add veggies, curry paste and coconut milk - it’s ready when chicken and veggies are cooked.
I use a slow cooker I got from Kmart when I was at uni. It’s the cheapest one that just has low and high cooking options.
