Strawberry Christmas Salad
What you’ll need:
For the Salad:
3 Handfuls of Rocket
1 handful of mint
1 punnet of strawberries
1cup of walnuts cut in half
For the Cashew Cheese:
1 cup cashews (soaked overnight or in warm water for 2 hours)
2 teaspoons of fresh lemon juice
Pinch of salt and freshly ground pepper
For the Dressing:
Juice of 1 lime
2 tablespoons of olive oil
Pinch of salt and pepper
What to do:
Make the cashew cheese - Add all of the ingredients to a food processor and pulse for a minute. Add 3 tablespoons of filtered water and process until smooth. Add to a glass jar and place in the fridge.
Make the dressing - Add all the dressing ingredients to a bowl and mix well or add to a glass jar with a lid and shake. Keep to the side.
Make the Salad - Place salad ingredients in a bowl and toss together. Just before you are ready to serve, drizzle the dressing over the salad and gently toss. Arrange on a serving plate and crumble the cashew cheese on top. Finish with a little salt and pepper.
